RADICCHIO BLISS

Rum

INGREDIENTS:

1 1/2 oz. Raspberry Rum

1/2 oz. Aperol

1/2 oz.  Simple Syrup

splash of Pineapple Puree

3 Raspberries

2 Lemon wedges

1 Finely chopped Radicchio Leaf

GARNISH : Raspberry and radicchio leaf


PREPARATION:

In a mixing glass place the radicchio, raspberries and simple syrup and squeeze in the juice of 2 lime wedges. Now start muddling… harder… harder… come on!! Is that all you got?

Once the berries are pureed add the Rum and Aperol and a splash of Pineapple puree with a scoop of ice and now we are ready to shake. Shake for 5 fast seconds and pour  it into a tall glass (without straining!) and garnish with a raspberry and a radicchio leaf.

The color is very appealing, a lovely shade of lavender … BELLISSIMO if I do say so myself! The first note that the nose picks up is  the citrus and the tartness and the taste is INCREDIBLE! The first sip is intoxicating in itself, like a dance in your mouth… a tic tac toe of sweet and bitter notes with pops of Raspberry and Radicchio.
