ENDLESS SUMMER

Rum

INGREDIENTS:

1  oz. Silver Rum

1/2 oz. Cruzan Banana Rum

1/4 oz. Aperol

1/2 oz. Pineapple Puree

1/2 oz. Ginger Vanilla Flavored Agave Syrup

1/2 oz. Fresh Squeezed Lemon

GARNISH:

Pineapple leaves

Kiwi Berry


PREPARATION:

The only good thing about the end of summer is the start of Pumpkin Spice everything.. including cocktails! But let’s save that for next week!

First of all lets take the ripest Pineapple you can find and blend it into a puree.  If you can’t find fresh pineapple,  canned pineapple will work too. If you are using fresh pineapple, you can add a little of water and sugar to sweetness preference. If you are using canned pineapple, just use the juice in the can and blend it up. After you have your puree, pour it through a strainer and set aside.

Take all the ingredients and place them in a shaker (including your delicious puree!) just following the recipe. Now shake it hard for five fast seconds.. ,make sure the pineapple puree mixes well with all the other ingredients.

Now double strain it into a highball glass with big chunk of ice.

Just like in the picture you garnish the glass with some pineapple leaves and half of a kiwi berry and for an even more appealing look you can add some slices of kiwi berry into the cocktail.

The color is the prettiest coral that you can imagine in your most memorable sunset. The scent is tropical bliss and the taste is sweet and tart with a playful balance between the banana, pineapple and Aperol and with a slight nip of spice from the ginger.

And now stay tuned for some fall drinks…..is time to replace those ice cream calories with some good warm and fuzzy cocktails!
