1-2-3 MARGARITA

INGREDIENTS:

1 1/2 oz. Montalvo Tequila

1 handful of Cotton Candy (shaped in a sphere)

1 Splash of Amoretti Lime Edible perfume

1 Pinch of Salt

LIME FOAM:

6 oz. Tequila

6 oz. Triple Sec

6 oz. Egg whites

3 oz. Lime juice

The above list of LIME FOAM ingredients will make enough for approx. 20 serving.

PREPARATION:

Are you planning to surprise your guest for Cinco de Mayo? Well what could possibly be better than a deconstructed MARGARITA?

First things first… lets make our LIME FOAM.  You can use a siphon or if you don’t have it you can use a little immersion blender, (for example, see THE CHAMPAGNE ROOM video) put all the ingredients together and whip it good!  Next, with your Cotton Candy shaped and ready, sprinkle some salt on it and spray a taste of the Lime Edible perfume on it. Lastly, pour a hearty shot of tequila into your shot glass of choice.

As you see in the picture we have used a rectangular plate to place the Cotton Candy, Tequila Shot and spoonful of lime foam in a savvy lineup of deliciousness. When you are ready to experiment with this and go all the way, just follow the same sequence.. 1-2-3! A little taste of your salted cotton candy… prepares your mouth for the smooth shot of Tequila and instead of biting on a boring lime you just nosh on the spoonful of LIME FOAM!

This drink is all about the modern and pristine presentation with an incredibly tasty twist on a classic margarita… sure to please all the senses!  Three distinctive items on a plate… who else DRINKS off of a plate?! Your palate will be begging for more! The taste is like having a sweet and salty shot of tequila and don’t forget the lime, MY WAY!  1-2-3…LOVE IT!
